春之始 The beginning of spring

農夫跳下耕耘機, 說, "我們晚上吃醃牛肉."
Nung-fu jumped off his tractor, and said, "Let's get corned beef for dinner."

愛爾蘭人傳統上在三月十七日過聖派翠克節, 也是春天的開始, 吃醃牛肉和包心菜.
Traditionally the Irish have corned beef with cabbage on St.Patrick's day, March 17th, also the beginning of spring.

本地超市早已為顧客將多種醃牛肉, 包心菜, 洋蔥及一些蔬菜集攏在促銷櫃檯.
In the local super market, different packages of corned beef, cabbages, onions and some other veggies have already been thoughtfully collected in the show case for customers.

鹽醃牛肉使包心菜愈增甜滋滋.
Corned beef makes the cabbage even sweeter.



 


農家食譜----醃牛肉
Farmer's simple food----Corned beef with cabbage




材料-------醃牛肉(熟或不熟,我選不熟的), 包心菜, 其他蔬菜隨意.
              Corned beef(cooked or uncooked, I prefer uncooked),
              cabbage, other veggies if desired.

做法-------鍋中水蓋過醃牛肉,大火煮滾.
Method---Water cover corned beef in pot, bring to boil.
              倒下附贈的香料.
              Pour the contents of spice package.
              小火燜煮約二至三小時,至叉子可插進肉裡.
              Cover pot and simmer for about 2-3 hours til fork tender.
              包心菜葉片與醃牛肉同煮約三分鐘至菜葉軟.
              Cabbage leaves cook with corned beef for about 3 minutes til tender.
              趁熱食用.
              Serve hot.

My Irish mother's recipe:
corned beef
cabbage
beef or chicken broth
dark beer (to add malt and barley taste)
onion, carrot, small potatoe
pickling spices
simmer 3-4 hours
